Celebrate Med Month with a Whole Grain Snack

May is “Med” Month, short for the Mediterranean Diet. Eating the Med Way includes a wide variety of fruits and vegetables, heart healthy fats, lean protein, and whole grains. The Mediterranean eating pattern can have significant positive impacts on health, reducing the risk of chronic disease.

To kick off Med Month, here’s a recipe for my favorite whole grain snack, popcorn!

Microwave Popcorn 


  • 1/3 cup popcorn kernels
  • 1 tsp olive oil
  • ½ tsp salt
  • ½ tsp paprika (optional)
  • ½ tsp cayenne pepper (optional)
  • 1 brown paper bag


  1. In a cup or small bowl, mix together the popcorn kernels and oil. Pour the coated corn into a brown paper lunch sack, and sprinkle in the salt. Fold the top of the bag over twice to seal in the ingredients. Leave as much room in the bag as possible, don’t make the folds too large!
  2. Cook in the microwave at full power for 2 1/2 to 3 minutes, or until you hear pauses of about 2 seconds between pops.
  3. Carefully open the bag to avoid steam and add the seasonings if desired. Shake to evenly distribute the seasonings and pour into a serving bowl.
